Aging Wines

Fermented from Welch's White Grape Raspberry concentrate, this is a medium bodied, off-dry (slightly sweet) red wine. Late last year in December, we made a batch of this wine and gave some of it away to friends and co-workers and the feedback we got from all of them was really good, so we decided to make another batch of this wine.
 

Chateau LeRoux
Cellar Date: 08/04/08

This wine was named for Louisiana's LeRoux, a melodic classic rock band from our state whoes music we enjoyed during our younger years. This wine is a blend of wild blackberry, pomegranate, and cranberry and it is a full-bodied, slightly dry red wine. The color of the wine is a deep rich ruby red with hints of blueish purple, a color definitely pleasing to the eye.
 

Banana Wine
Cellar Date: 09/24/08

Made from Dole bananas, this wine is a medium-bodied, slightly dry wine. This wine is aging in a carboy with Stavin Hungarian Oak Cubes. The wine will most likely be sweetened slightly before bottling.

A blend of peach, white grape and wild blackberry, this wine is an medium bodied, slightly dry wine with an aroma all it's own.
 

Le Rouge

In my opinion, the most delicious strawberries ever known to mankind are grown in Ponchatoula, Louisiana. This wine was fermented from sweet Ponchatoula strawberries and it is a medium bodied, slightly dry red wine.

This wine was fermented from a blend of raspberry, blueberry, blackberry and cranberry. What started off as one of our experiments blending different types of berries has turned into quite a delicious wine. A medium bodied, slightly dry, dark ruby red wine that is pleasing to the palate, even though the wine is relatively young.

I found a large bramble patch of wild dewberries growing near Ponchitalowa Drive in Covington and I harvested several buckets of the large delicious berries to create this wine. This wine is a medium bodied, slightly dry wine.
